Job Description:
As a Bakery Research and Development Specialist, you will play a pivotal role in the creation and improvement of our diverse range of baked products. You will be responsible for developing new recipes, refining existing formulas, and ensuring that our products meet the highest standards of quality, taste, and consistency.
Responsibilities:
  • Research and develop new bakery products, including bread, dough, bagels, flatbread, pita, and tortillas.
  • Collaborate with cross-functional teams including production, marketing, and sales to understand market trends, consumer preferences, and product requirements.
  • Conduct experiments, trials, and tastings to optimize product formulations, textures, and flavors.
  • Source and evaluate ingredients, ensuring they meet quality standards and regulatory requirements.
  • Perform regular analysis and testing of products to ensure they meet company specifications for taste, texture, shelf-life, and nutritional content.
  • Keep abreast of industry trends, emerging technologies, and best practices in bakery production and R&D.
  • Document all recipe modifications, test results, and findings in a detailed and organized manner.
  • Provide technical support to production teams, troubleshoot any issues, and implement process improvements.
  • Participate in product launches, presentations, and customer meetings to showcase new products and innovations.
  • Maintain a clean, safe, and organized laboratory environment, adhering to food safety and sanitation protocols.
Qualifications:
  • Bachelor s degree in food science, Culinary Arts, or related field (Master's degree preferred).
  • Minimum of 5 years of experience in bakery research and development, with a focus on bread, dough, bagels, flatbread, pita, and tortillas.
  • Proven track record of successfully launching new bakery products from concept to commercialization.
  • In-depth knowledge of bakery ingredients, formulations, processes, and equipment.
  • Strong understanding of food chemistry, microbiology, and food safety principles.
  • Excellent sensory evaluation skills with the ability to discern flavors, textures, and aromas.
  • Proficiency in data analysis, recipe scaling, and product costing.
  • Creative and innovative mindset with a passion for exploring new flavors, trends, and techniques.
  • Strong communication skills with the ability to collaborate effectively across teams.
  • Detail-oriented, organized, and able to manage multiple projects simultaneously.
  • Experience working in a fast-paced food manufacturing environment is a plus.
